I would do this with a compound clipping mask.
Start off by drawing a rectangle that completely covers the photograph.
Then draw your triangle-or-whatever.
Make a compound path of the triangle and the rectangle.
Use this compound path as a clipping mask.
Now you’ve got a photo with a hole in it.
