Bookmark titles created in the Acrobat Family are limited to 512 characters. Simple to find out, just paste an entire page of text and see where it gets truncated.
Yes, you can use carriage returns in a bookmark string, but you can only insert then programmatically (e.g. via copy-paste). I wouldn't rely on it though, not all rendering applications will respect the line breaks.
